Red velvet cake is a delicious and popular type of cake that have a distinctive deep red color. It is typically layered with cream cheese frosting, which complements the rich flavor of the cake. The red color comes from the reaction between cocoa powder and vinegar, giving the cake a unique taste and texture. Red velvet cake is often enjoyed for special occasions like birthday party, wedding or holidays but it can be enjoyed anytime as a sweet treat.


Cake flour 250g

2 large eggs

½ tablespoon preservative

1 ½ cup of sugar

½ tablespoon baking soda

1 ½ cup of vegetable oil

A pinch of salt

2 tablespoon cocoa powder

1 teaspoon Red food coloring (I recommend Mekang in Nigeria)

½ teaspoon of red color paste

1tablespoon lime or lemon

2 teaspoon vinegar

½ teaspoon baking powder

1 tablespoon vanilla extract

250ml milk

1 teaspoon cake flavours


Mix eggs, vegetable oil, milk and lime in a bowl and set aside.

Mix cocoa powder, food coloring and vinegar in a separate bowl.

Pour the second mixture into the first mixture and mix together properly and add sugar and continue mixing till properly incorporated.

Measure all dry ingredients (flour, baking soda, baking powder, salt) in bowl and sift.

Pour your liquid mixture gradually into the dry and mix till smooth and add flavours.

Preheat your oven, grease your pan and line with baking paper

Pour the batter into the pan and bake for 45mins – 1 hour.


This recipe is meant for a 6 inch pan, for bigger cakes, the recipe can be increased.

The cake goes well with cream cheese, buttercream and whipped cream frostings.
