Ingredients

1 kg of long-grain parboiled rice

100ml of tomato puree or tomato paste

150ml of pepper mix

3 bay leaves

12g of curry powder

5g of dried thyme

500ml of chicken or beef broth

350ml vegetable oil

50g chicken seasoning

Salt to taste

1.5 litres of water

Minced garlic and sliced onions

NOTE: Pepper mix should consist of Red bell pepper, Tomatoes, Onions and Scotch bonnet on a ratio 2:3:2:1 respectively.

Proceedure:

Rinse the rice thoroughly and set aside

Heat vegetable oil in a large pot over medium heat

Add the minced garlic and sliced onions and saute until translucent

Add Bay leaves

Add tomato paste and fry for five minutes, then add the pepper mix and fry for another 10 minutes

Stir in chicken seasoning, curry powder and dried thyme

Add salt to taste

Add the rinsed rice to the pot and stir it well to coat it with the tomato mixture

Pour in the chicken or beef broth and water ensuring the liquid covers the rice by about ½ inch.

Cover the pot tightly and reduce the heat to low. Allow the rice to simmer until it is cooked and the liquid is absorbed

Allow the rice to burn slightly to give the rice a smoky flavor

Add a little margarine

Once it is ready, fluff it gently with a spatula to separate the grains.
